Pasta like a Pro

Saying this recipe is better than our Nonna’s would be a bad idea, but she’ll never know if we just think it…

When you need a delicious and healthy pasta for friends or the family, try this: warm olives, wilted greens, fresh parmigiano and a dash of chili oil for flavour. Buon Appetito!

Spaghetti with Warm Olives and Arugula 2 tbsp olive oil 1 small yellow onion, chopped 2 garlic cloves, chopped fine 1/4 cup of white wine Prima Strada mixed olives 500 g dried spaghetti 1 generous handful of arugula Prima Strada chili oil, to taste 1 lemon, zest chunk of parmigiano Salt & Pepper, to taste

Heat a drizzle of olive oil in a large frying pan. Add onion, stirring often until softened, then add the garlic until it just starts to colour. Meanwhile, cook the spaghetti in a pot of boiling salted water (it should taste like the sea!). Depending on the brand, around 8 minutes or al dente. Every good restaurant has a secret menu with tips, tricks and modifications to enhance the meal. When it comes to pizza in Victoria, we’re no exception. We call them game changers. Over the years, we’ve seen our wood-fired pizza classics revamped with a modification or two that have become weekly staples.

A few of our favourites we’re excited to share with you – Buon appetito!

Margherita pizza… add house mixed olives (warm blistery olives are delicious!) Filetti pizza… add a meat (prosciutto, house sausage, house smoked ham or house pepperoni) Diavola… add pesto drizzle + ricotta (no surprises here – DeCarolis/Dallas family favourite) Margherita… minus cheese, add mushrooms, onions, peppers, olives (vegan classic!) Any pizza… add an egg on top (all time favourite brunch choice)

Join Prima Strada Cook Street on July 24 and Prima Strada Fort Street on July 25 for pizza and a free sample of Averill Creek‘s newest wine, JOUE. Averill Creek wine maker Brent will be onsite between 5pm – 7pm to tell us about the vino but more importantly show off and let us taste his newest creation. PPS’ Executive Chef Franz has put together a fantastico pizza and wine pairing which we know you’ll love.

Pizza and wine go together like tomatoes and fresh mozzarella. Pizza would not be the same without these simple ingredients. Fact. That’s how we feel about our friends at Averill Creek and their newest wine.

Our friendship with local Cowichan winery, Averill Creek Vineyard is something special. So special that we’re getting an exclusive sneak peek at their newest wines…and we’re sampling with you!

Negroni Week 2019

June marks the start of summer with so many things to look forward to including a whole week celebrating a classic Italian cocktail, the Negroni. You know you’re special when you get your own week.

June 24 – 30, PPS will donate $1 from each Negroni sold to our chosen charity, Little Free Library.

It’s no surprise that we’re a group of readers at PPS. We especially love sharing a good cookbook. Our Little Free Libraries (outside our Cook Street and Fort Street locations) are designed to bring our neighbours together, inspire all ages and spark recycling efforts. It also gives us an opportunity to share the books we read, enjoy and want to share.  We hope you’ll enjoy swapping your used books as much as we do and if you forget to bring a book next time – enjoy a Negroni!
