Cooking with Enzo – Sausage & Peppers

Make Sausage & Peppers at home, using Prima Strada house made sausage of course!

There’s flexibility with this recipe – add mushrooms or pickled cherry peppers or use spicy sausage. We keep it simple – this version works for everyone in our house.

It’s a generous amount that feeds us 4 for a fews day – breakfast, lunch and dinner. Can be served over polenta too!

Pick up Prima Strada Sausage from the Grab & Go case at your favourite pizzeria. Thaw and get cooking!



12 links of Prima Strada sausage 6 peppers – red, yellow and orange 3 yellow onions 4 large cloves of garlic 2 – 9×13 pans

Heat the oven to 400 Cut onions into 1 inch wedges Core, seed and cut peppers into 1 inch strips Add enough olive oil to coat the pans Pan fry the sausage links, we used 2 skillets. Brown on all sides – approximately 8 minutes. Move from skillet to pan. Add onions, peppers and garlic to the pan. Cook until wilted and still crunchy. Add to sausage, diving between the pans. Gelato and Sorbetto – Small batch, finest ingredients.

Every week, the Prima Strada Production Kitchen becomes a gelateria. We use traditional methods and the finest ingredients to create small batches of gelato and sorbetto. It’s so good, it reminds us of Italy and that makes us really proud.

We all have lists of our favourite flavours. You might recall the saying, “so many books, so little time.” This is how we feel about gelato and sorbetto! So many flavours, so little time (to make and eat them all!) My list of favourite flavours includes black liquorice, pistachio, pistachio almond and Torrone. I almost forgot sour cherry and rarely can resist chocolate!

With a small freezer, we stay to making the favourites: Chocolate, Fiore di latte (sweet cream) and Hazelnut. Our Mocha gelato is made with coffee from island favourite Drumroaster We can’t resist making a holiday flavour too! Eggnog, Candy Cane, Pumpkin Pie have all been favourites.

What’s the difference between ice cream and gelato? Ice cream starts with a custard base (and eggs) while gelato uses more milk and no eggs.

We’re writing to assure you we at Pizzeria Prima Strada remain dedicated to our purpose of Pizza. People. Passion. It’s what we’re all about!

We’ll miss you in the dining rooms over the next few weeks but rest assured we’re still here for TAKE OUT and PATIO DINING.

Vancouver Island offers so many incredible al fresco dining spots – parks, beaches, lake, rivers and more. So if our patios are full up, we suggest you and your pizza travel to a new spot. While you’re there, snap a photo and share it with us.

RGO = Rosemary Garlic Olive Oil
Cooking with Rosemary Garlic Oil

We usually keep a jar (or two, or three…) of our house-made Rosemary Garlic Oil (RGO) in the fridge at home. It makes life easy, and most importantly – more delicious!

Our house-made RGO is available by the jar at all of the pizzerias! Just stop by the Grab & Go case while you’re dining in or picking up your takeout order.

While there are infinite options with RGO, here are a few of our favourites we hope will inspire you: Dip or drizzle on your takeout pizza. Just like our chili oil. Substitute it for butter or oil for added deliciousness. Brush it onto toast or bruschetta. Drizzle it over grilled steak or roasted chicken or pork. Marinate vegetables in RGO, then sauté or oven roast.

In our latest video, we tackle RGO-marinated roast chicken and veg. It’s super simple, really delicious and always turns out great.

I used 2 chickens, 2 jars of RGO and marinated overnight. Over medium heat, skin side down, brown the pieces (6-8 minutes), pop in a 425 degree oven with lid on for 20 minutes, remove the lid and cook for another 10-20 minutes until chicken is cooked through.

Toss veggies in RGO, roast at 325 for 15-30…
