Make Sausage & Peppers at home, using Prima Strada house made sausage of course!
There’s flexibility with this recipe – add mushrooms or pickled cherry peppers or use spicy sausage. We keep it simple – this version works for everyone in our house.
It’s a generous amount that feeds us 4 for a fews day – breakfast, lunch and dinner. Can be served over polenta too!

12 links of Prima Strada sausage
6 peppers – red, yellow and orange
3 yellow onions
4 large cloves of garlic
2 – 9×13 pans
Heat the oven to 400
Cut onions into 1 inch wedges
Core, seed and cut peppers into 1 inch strips
Add enough olive oil to coat the pans
Pan fry the sausage links, we used 2 skillets.
Brown on all sides – approximately 8 minutes.
Move from skillet to pan.
Add onions, peppers and garlic to the pan.
Cook until wilted and still crunchy.
Add to sausage, diving between the pans.
Deglaze pan with hot water if you want some extra juice. Add to pans.
Pans into the oven for 25-45 minutes.
Bake uncovered tossing occassionally under peppers are tender and no trace of pink remains in the sausages.
Serve hot.
